File this in the department of why didn't they think of this sooner: vending machines that sell freshly-made salads full of local and organic ingredients. So far the vending machines--decorated with wood and live plants and a green carpet (literally)--are only available in Chicago. But this looks like something that could be transplanted (sorry) into loads of cities. Oh, and the salads come in recyclable plastic mason jars. Could this be any more genius?
