Today I read 58 TRILLION Cows are slaughtered each year around the world for food. I recently went vegetarian about 9 months ago..I feel so much better physically and now mentally when I see statistics like this.

When people tend to have their own vegetable garden, they use less water (clearly) than mainstream agriculture. I can see an increase in backyard-gardening.

We'll probably see home gardens adapt better designs over time as well in order to save more rainfall (i.e. increasing the height of garden beds).

In terms of crops, we might see more growth and consumption of plants that don't require as much water like spinach, tomatoes, and mustard greens. Fat nation might turn to salad nation for a short bit before a more global solution is approached.

Yikes, this is a terrifying stat. How do we make plant based diets more common?

This has to happen eventually. Prices will eventually become extremely prohibitive on meat and that will drive people toward becoming vegetarians.

Or we need a (new) modest proposal ....

It's hard to argue with the logic of the proposal. It's always in season, would create a new market for goods as well as employment, despite it only being 9 month contracts. ;)
