Props to Grub Street for unearthing this pumpkin cookbook with a foreword by the late great Pete Seeger. He starts by arguing (presciently) for a vegetarian diet (for environmental reasons) but then he says it best: "To heck with all this. Pumpkin pie, pumpkin bread, pumpkin wine—did you ever know there were so many ways to cook this queen of vegetables? Test and taste these recipes, and you will find yourself part of what we call our 'pumpkin project.'" All that 4 decades before pumpkin lattes.
