Repurpose the leftovers from an event -- without throwing any food away.

Next time you attend or host a potluck, BBQ, picnic, or any event with food, make a personal commitment not to allow anything edible to go in a trash can at the end of the event. Leftovers can be great for casseroles, soups, and even just reheating the next day. Or, if what's left over doesn't fit your dietary needs, find a good home for it with others. Leftover food is perfect for composting, too, so try not to put even what's gone bad in the hot sun into a trash can!

Wasted food not only contributes to hunger, it clutters landfills and contributes to climate change. Meat especially has a high carbon footprint; when wasted, that's carbon spent for nothing.

    I attended a BBQ this weekend where a ton of food was left over! I took home chicken, cornbread muffins, and corn on the cob, and all three of those are in the casserole you can see here. (Easy-peasy mini-recipe: Chicken, corn, mushrooms, mixed frozen vegetables, cover with crumbled cornbread, top with shredded cheese, bake at 350 for 30 minutes.)

    There were also more than a dozen donuts left over, so I shared those with my apartment complex. I left the boxes in the apartment lobby -- I was going to come back to add a note saying "for all to enjoy," but when I got back downstairs, the donuts were already gone. No boxes in the trash, so I think someone snagged them for their family's sweet tooth--hurray!
