    Made some salads for this week.... kale, oven-baked chicken, carrots, garbanzo beans, beets, cucumbers, figs, and a vinaigrette dressing. Had the first one today and it was pretty darn GOOD!

    I made jars of quinoa salad and green juices. Feels good to eat healthy lunches and spend less eating out!

    I love to cook ahead for the week! I hadn't done it lately until this weekend -- these pics are actually of previous lunches, but this weekend I made pesto from my balcony basil and cooked ahead for lunch and dinners all week. I then went out to lunch today (had a lunch meeting) but I'll bring my premade lunches tomorrow :)

    I need to start the juicing part!
